Creamy Cucumber Dip Recipe

1 1/2 cups cashews
2 tbsp lemon juice
1/4 cup fresh chopped dill
2 tbsp fresh chopped chives
Place cashews in a bowl of water and soak covered in 1 inch of water for 5 hours. Peel and shred cucumber, and place in a strainer. Allow cucumber to strain for 10 minutes and squeeze to remoce as much liquid as possible. Drain water from cashews.
Place shredded cucumber, lemon juice, dill, chives and cashews into VitaMix or food processor and puree to a smooth consistency. Enjoy with sliced bell peppers or your favorite vegetable crudites.
